A clean house is the sign of a broken computer.

Apple Harvest Stew

Apple Harvest Stew (Perfect for fall days!)
Serves: 6-8
Source: Grain-Free Gourmet

Oil, for browning
2 lb (1kg) stewing beef, cubed
1/2-1 tsp (2-5mL) salt
1/4 tsp (1mL) pepper
1/2 tsp (2mL) dried thyme
2.5 C (625mL) apple cider
2 Tbsp (25mL) cider vinegar
1/2 C (125mL) water
5 large carrots, coarsely chopped
1 onion, chopped
4 stalks celery, chopped
1 McIntosh apple (or other tart variety), peeled and chopped
1 Tbsp (15mL) plain yogurt (optional)
1 Tbsp (15mL) lemon juice

Brown the meat in a large pot over medium heat in a bit of oil. Sprinkle the salt, pepper and thyme over the browned meat. Pour the cider, vinegar and water into the pot, and simmer, covered, for 45min. Add the remaining ingredients and cook uncovered for another 45 mins. Serve over roasted or mashed potatoes or noodles if desired. (It's also fine, just as it is.)

We tried this last night for the first time, and found it quite tasty. Since it's apple season (and thus apple-cider season), now's a great time for this recipe. It takes a bit of time, but most of that is simmer-time, and, aside from the chopping requirements, is otherwise easy to put together.
